Who's coming for dinner

Who's coming for dinner
It's been a cooler day here in Ontario. Makes you want to bake. So off to the garden to pick a large zucchini. Time to make zucchini bread.
Here is a yummy recipe from my friend Janet.
Pre- heat oven at 325 degrees
Grease and flour 2 loaf pans 9x5

3 eggs
2 c sugar
2 tsp vanilla
1 c oil (canola)
3 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp salt

add to the mixture
1 1/2 c of chopped nuts or choc chips and dried cranberries
3 cups of zucchini

mix well
Bake for 1 hour. (set your timer)
Yummy we had this with our dinner and a fresh caesar salad with chicken, cherry tomatoes fresh from the vine,steamed green beans freshly picked and to top it all off for dessert we had custard with strawberries.I hope you enjoyed your meal....lol

  1. What time is dinner? Set an extra plate for me. Hubby brought home a ginormous zucchinni yesterday, and I need to do something with it. I need to run out for some veggie oil, and then I'll be baking bread. Mmmmm....

  5. Yum!!! The recipe sounds like mine, but I have substituted the 1 cup of oil with 1/2 cup oil and 1/2 cup of applesauce (advice from my SIL).

  6. I'm so glad you popped in today, it has been a glorious Saturday around here.
    About your entry, have you thought of just hanging a beautiful mirror and possible some plates around it. If your split entry is like the one we use to have it's heavy traffic area, can't handle anything large that could get bumped into or knocked over.... I'll be anxious to hear what you decide on..hugs ~lynne~
