I have been good... Happy new year

Well Santa was sure good to me. I MUST HAVE BEEN GOOD...


Look what he brought me.
 A red KITCHENAID STAND MIXER.


Well you know how much I love red....   Let's give it a try.


On tonights menu we are having homemade cauliflower soup with fresh biscuits.
L et's get started.
1 cauliflower head. I use half.
1 whole sweet onion chopped.
2 carrots finely chopped
tsp of garlic, I buy it in a jar already chopped.
3 potatoes pealed and chopped.


In a large pot add a tbsp of oil (I use coconut) heard it's better for me.
Saute your onion , carrots and garlic.
Then add 5 cups of water.
Add potatoes and simmer for about a 1/2 hour.
Then add the cauliflower.
continue cooking for another 15 mins. Then I take my hand mixer and blend the ingredients to puree it.
I leave a few chunks in for MR. DH.  He likes it that way.

Dish it out and I add some graded old cheddar to the top.



Now on to my biscuits.
2 cups of flour
1 tbsp of baking powder
1/2 tsp salt

1/4 cup of butter                          
3 tbsp of shortening
3/4 cup of milk.
I added some raisins(optional).
into the bowl I added all the ingredients except for the milk.
I used my flat beater on slow till the ingred. looked like coarse crumble
then I added the milk and mixed it. turn it out onto a floured board and knead it gently.
Now roll it out to 1/2in. and use a 2inch cutter.
bake at 450 for 8-10 mins. I used parchment paper.




Now enjoy
HMMMMM YUMMM!


Nothing like home made soup and biscuits.

    We made our christmas cake again this year (2 batches) so big red got a dandy work out.

  4. Those red Kitchen-Aid mixers were not available when I purchased mine. Pretty color. I have seen pink ones too.
